That's why I only do it a couple of times a year. That 6 hours is indirect heat...smoking the meat.

I also do direct heat ribs but to me it's the difference between a fillet and a strip. Both are great, one is just a little better but you're going to pay.

My 2 hours are indirect heat to. Charcoal on one half of BBQ and ribs placed on the other side. Close lid, enjoy beer and wait.

Do you have a dual-chamber setup or something?

Last night I grilled some pork chops - I grilled them over medium heat on my gas grill. Also, I used hickory chips in my smoker. All the water boiled out of the smoker, and the chips started smoking big-time, which was unintentional but as it turns out was really good in this case. I didn't have any marinades or sauces to put on the chops, so I put a little meat tenderizer, pepper, and a thick layer of honey. The honey immediately melted off and settled onto the foil on which I was cooking the chops, creating a bubbling sea of carmelized goodness around each chop.

The end result: delicious!!!

Seven-layer salad and sweet potatoes with brown sugar, cinnamon, and butter rounded out the meal.

I use the Smokin Pit. The thermometer at the far end usually stays between 200 and 250 deg.

I did three racks of pork ribs this past week. Turned out great.

I have some two inch thick ribeyes waiting for the weekend. Did some burgers Sunday. I also have some Mahi Mahi waiting.

man, I'm sitting at work smackin my lips. I've got to break out the grill this weekend. I wish I had a smoker, I have borrowed my brothers a few times and did a recipe similiar to the pulled pork recipe posted in this thread. Good times.
