Let's play "What's on Your Grill?" - summer 2005 edition

So up until last night I had done a few warmup grills; you know, easy "winter" stuff - hot dogs, etc. But yesterday came, and not a moment too soon. Yesterday was the day I have waited for all winter. Yesterday was the thing that warm summer dreams are made from. Yesterday was the first real grilling challenge of 2005.

Here's what we had:

A whole side of Pacific wild salmon (it was freakin' huge). Brushed with butter, a little garlic salt, and a fair amount of pepper. I squeezed half a lemon on the whole thing, then left the rind on top to cook. I cooked it over a low gas flame until it was flaky and pink. <insert growling stomach noise here> I'm going to have leftover salmon for several meals yet to come.

EDIT: I forgot to mention it, but I put some bourbon-soaked hickory chips directly underneath the fish in my smoking pan.

Sides: peas, and sweet potatoes with brown sugar, butter, and cinnamon.
Beverage: wifey had rum 'n Coke, I had rum 'n cream soda. The rum was coconut flavored, and was an excellent addition to the soft drinks.

Even the dog enjoyed this meal - she got a whole bunch of the grilled fatty salmon skin.




So what is everyone else having? I'm especially eager to hear from Red Dawn, since he had so many great grilling ideas in this thread last year (who knew that he could cook?).

I cooked the absolute best steak ever on Saturday.

I had 2 1 1/2" T-bones which I rubbed with a little kosher salt, and plenty of freshly ground green and black pepper (ground with a rolling pin). I then put a little butter and fresh garlic on one side and placed them on the grill.

5 minutes per side and they were the perfect medium rare.

grilled veggies, veggie burgers, and grilled cheese sandwiches... i'm vegetarian :D

i do love the bbq sauce though :heart:

and i'd be much obliged if someone gave me a good veggie marinade suggestion!

MMM BBQ :)

i usually stick to steak (porterhouse or fillet) and snags :D

Usually wash it down with :beer:
but we do our turkey on the barbie at christmas (got a big hood, and it does hams and turkey :) )

I love BBQ (even ATOT BBQ ;) )

Wow that sounds awesome. Just burgers and sausages so far here, but this was my homemade burger recipe:

- ~1.5 lbs extra lean ground beef
- 2 eggs
- wheat & sesame crackers, crushed
- Montreal steak spice
- garlic salt
- onion flakes
(mix all in bowl and handshape patties)

Made 2 huge patties and 4 regular sized ones, great for freezing - used wax paper to keep patties divided.

we had a open fire cookout on saturday day which consisted of ribs, steak, italian sausage and corn. beer and salad on the side.

Not much so far....burgers, jumbo hotdogs, chicken, tuna steak...

I'm still getting the hang of my new grill...I don't really want to try anything complex yet :)

Lamb kebab with a home-made coating (some curry powder, spices, herbs etc).
Some crappy steak (far too thinly sliced so it all went dry and crappy).

Pulled Pork BBQ:

1 whole pork shoulder - place in large tinfoil pan
cover with Dinosaur BBQ sauce
set the Grill-N-Roast Grill on low (one burner only!)
make sure hickory smoke chips are in!
slow cook for 10-12 hours (baste with drippings often)!
pull pork apart with forks when finished
serve on bun with PLENTY of extra Dinosaur sauce!

Saturday: Fresh Salmon (I caught it Saturday morning) It was REALLY tasty stuff. Wrapped it in foil with butter, salt, pepper, and onion.

Sunday: Ribeye Steaks (jcardard for tenderness). I seasoned it lightly with Cracked Black Pepper, and it was perfect.

Eh, its Foreman for me. Would like a nice stainless steel, but I can't complain:)

Lately I've been cooking with fresh veggies and flavors rather than buying premade marinades. When you're 18 and going to the market everyday to get fresh food, I think that I'm a 70 year old woman! :p

On Saturday I smoked an 8 lb brisket for 7 hours. It had a quarter inch patina and was excellent.

Having it for lunch today and supper and more.

I cooked 72 hamburgers Saturday afternoon. They were the pre-packaged kind that shrink up to the size of sausage patties. I'm having a cookout this weekend, though, and there should be some nice stuff on the grill.

Nothing better than cooking the entire meal on the grill. Grilling season never stops for me. I did two 1" thick ribeyes medium rare with zuchinni and potatos Saturday.

MMMMM. Par boiled them in beer and onions. Tossed them on the grill with real wood charcoal. Ate them on a buttered brat bun (like a semmel for hot dogs) with some fresh cheddar cheese.

This is summer in Wisconsin.

simple variation on a simple burger
1-1.5 lb of 96% lean beef
1-2 tbsp Montreal Steak Seasoning
2-4 tbsp of Grated Locatella Cheese (you *could* use parmesan, but eh)
1/2 of a cooking onion chopped finely
Sprinkle Garlic Powder
Sprinkle Oregano to taste
Sprinkle Basil to taste
Optional 1 egg
Shredded cheddar/mozzarella mix

mix all in a bowl, takes about 5 minutes and grill to perfection makes 1 huge burger, 2 big burgers or 4 normal sized burger ... wonderful burger

I dunno man...when I want a burger, I don't want meatloaf on a bun. The farthest I'll go with a burger is putting Hog's Breath or Montreal seasoning on it, but I've found the best burgers I've hard are nothing but beef.

to each his own, this burger takes less than 15 mins, start to finish and i think it tastes much better than a regular beef burger

Had kalbi marinated steak kabobs yesterday, with vegtable kabobs consisting of red potatos, 3 colors of peppers, mushrooms, and corn on the cob.

Sunday we grilled over 12 "16oz" buffalo steaks. (damn tasty) we also grilled severial burgers, potato wedges, (potato wedges with butter, garlic, salt,pepper wrapped in tinfoil) corn on the cob and green pepper slices. :)
My dad always spashes a little Root Beer on the burgers, So far it doesnt really change the tast but it makes the smell of cooking food really come out. :)
