french is easier at the harder levels compared to spanish, if im not mistaken. that's what my french teacher (who is fluent in both spanish and french) said.
 
French and Spanish should come comparatively easily to an English speaker (relative to Mandarin/Japanese/Arabic/Persian/Greek etc)
The letters are almost the same, so you can begin to 'read' words from day one.

French accent is a little bit harder to master, Spanish is simpler that way...

German will be the easiest to learn for an English speaker, next will be the Romance languages, after that idk if there are any other easy ones. Slavic ones are something completely different as well as some of the Eastern languages you mentioned...However I must say Mandarin is not hard to speak.

'mastering' is surely an exaggeration, but you would be surprised how much you can pick up in two weeks.... I did 9 days of Spanish immersion (8 hours a day) a few years ago, and i went from nothing to being able to read/write/speak a few simple paragraphs... prety amazing actually

I minored in German in college and it was actually quite easy to learn. I spent 3 months in the German-speaking countries on 2 separate occasions, and after being immersed in any language for a couple weeks you would be amazed at how much you really know. i go back every year for a couple weeks, and even though i've been out of college for 3 years now i still speak it well. i also took a year of mandarin chinese in college, and it was really interesting. i found it somewhat similar to german in areas like verb placement, but my handwriting is worse than terrible so the drawing of the chinese characters was difficult.

 
well i did learn French for one year way back in 7th grade. i remember that it wasn't too difficult. you remember most of the things. the incredibly hard part is to pronounce it correctly. half of the words in french have atleast one part that isn't spoken. like if u have 2 t's i think and so on. but to understand it written, very easy and even kinda similar to spanish.
