LCDs (Not Monitors) and Case Mods

I am interested in putting an LCD display on my case. Maybe something that will display an MP3 player or even just plain CPU usage and temperature information. Since I know nothing about hooking them up, can someone point me in the right direction? Specifically I am interested in how they hook up to the motherboard and how they are controlled. What are the different interfaces / display types? For example, I have seen the following specs:

hd44780
sed133x
hd44780
Noritake 800a

What is a display with a good balance of quality and price?
