Nothing wrong with lard. For animal fat, its lower in saturated fat and adds flavor. Probably better for you than butter.

I prefer cooking with lard over anything else if I have it.
Better for baking especially. If you have never had buttermilk biscuits or pies made with lard you are missing out.

I had the pleasure of cooking with real home made lard once...a friends grandmother gave me a small tupperware container. I used it in place of oil to cook with. Probably the best fried eggs (also other dishes) you've ever had...

makes great pies

and way better than the old vegetable shortening which was trans fat (i think the new stuff is trans fat free)

edit: nope, crisco still has trans fat, just less than 1 gram per serving (which is still too much)

Lard is one of the best shortening-type fats out there.

Fairly high saturated fat content in comparison to plant oil products, but an awesome amount of unsaturated fats. That whole combination helps give it the presentation it has - but being in that combination, versus containing trans-fats, means it doesn't keep very well in comparison.

Lard is great, just don't eat a lot of it. Pisses me off that Taiwanese pastries are on vegetable shortening now.
