would i be able to have a computer with 2 lan cards connect to two separate computers to create a 3-way lan?
 
yes but it would not be worth the hassel sice you may need cross-over cables and since 4 port hubs only cost $20.

You would be even better off just buying a DSL/Cable router (even if you do not have broadband) that can act as a hub, firewall and DHCP sever for you, and they only cost $50.

Not even $50. I have been buying netgear 802.11b routers for my customers @$10 AR every few weeks for a few months now.

Yep, and another alternative is the FS/FT forum. I picked up a 4-port US Robotics Router (10/100 hub) for $20 a few weeks ago that works great as a hub for my 3 systems.
 
Yeah you can do such a Concoction, it will be three computers and two separate LANs that would have to Bridge.

Internet sharing will be problematic as well as some other LAN functions.

Otherwise get a Cable/DSL Router, use the switch only if you do not have Internet Broadband connection, or use the whole Router to share the Internet.
