Just thought I'd share my after Christmas dinner.

One 1.5 pound rib steak and one chuck steak (my wife didn't want a rib steak, weird).

Was SOOOOOOOOOOO good.

Just simple cracked pepper and kosher salt (and a splash of liquid smoke) on mine; the wife had some fine ground (Fresh) pepper and some salt...

On another note, we spent about $100 on a large prime rib roast for the family for Christmas. Dinner was at the in-laws. Yet again, the meat was ruined by being way over-cooked. (Not that it was bad; it was still an excellent meal) A few years ago, we had an argument over the temperature to cook beef to, and when it's done. I refrained from arguing this year. Fortunately, on Christmas eve, I also cooked another large roast to slice thinly for beef on weck sandwiches. Slow cooked until it hit 140 degrees, then immediately removed from the oven. Not a scrap was left over from that one.

I know...but she insisted!

She's from a very poor family (Navajo grew up on the Navajo reservation)...I guess a $10 steak doesn't taste as good as a $3 piece of meat.
