OK, I need to learn how to cook :p I know a little bit, but I'd like to get better. So I'm looking for some good, simple, preferably healthy recipies. They can be for anything: Appetizers, main courses, deserts, snacky stuff, etc. I'm just tired of eating crap so often. Any ideas? Don't need anything big; I'll probably be cooking for one or two people most of the time (myself & my girlfriend, mostly).

I am a proponent of brining, which is a sugar/salt water bath you soak your poultry in to season prior to any cooking

1/2 cup Sugar
1/2 cup Kosher Salt (if using table salt, go 1/4 cup)
1/2 gallon cold water
stir until disolves, place bird in brine solution and cover (double the brine solution if needed, but make sure the bird is fully immersed), & refrigerate
Brine 5 hours for avg. size chicken
once brine bath is done, rinse your poultry well
do not season any further with salt
season only with pepper
roast at 325 degrees, 20 minutes per pound

your bird will be very juicy!

I usually chop up an onion, an orange, add some fresh rosemary and put that in the cavity prior to roasting

Pasta is so easy to make and is healthy- especially if you get some of the organic whole wheat pastas they are making now. Every pasta box has simple recipe to cook it. Buy a jar of tomato sauce to go with it

We did that the other day :D . I love pasta - simple, fast, filling, and it tastes good too.

Get loaf of bread. Put in toaster. Depress button. 2 minutes later spread butter, sugar and cinnamon on toast. Boom, cinnamon toast :)

Really simple recipe that tastes very good: take chicken breasts, dip them in milk, and then cover them in dried mashed potato flakes (flavored ones work well too). Bake til the juices run clear. It's REALLY good.

Start with chicken and experiment. Bake some, toss on some ham and cheddar cheese, and let the cheese melt. Mmmmm. Oh, chicken + lemon juice+ white cooking wine+ rosemary, oregano, and thyme, in oven, covered with tinfoil. Yum!

This works much better if you use some broth from septic packs in place of some of the water. :)

I love meatloaf and this is one of my all-time fav's. Just make sure you pre-cook the minced veggies thoroughly and drain before mixing into the meat.

Pre-Heat oven to 350-degrees

Finely chop:
4 Carrots
4 Celery
1 med. Onion
Add: 1 large clove garlic, minced
Steam in vegetable steamer or microwave
Drain well


Mix together:
1 lb. lean ground pork
1 lb. lean ground beef
To meat, add:
2 eggs, beaten
½ can condensed cream of mushroom soup (do not thin)
Add in the steamed vegetable mixture
¾ Cup breadcrumbs
¼ to ½ tsp. dried oregano
2 Tbsp. fresh parsley, chopped (if you do not have fresh, skip)
Salt and Pepper to taste
Mix Well
Put into 9 x 13 pan. Form loaf, leaving a couple of inches of space between loaf and edges of pan. Do not compress meat mixture too much as this will toughen the loaf.

Cook uncovered at 350-degrees for 1 hour and 15 minutes.
Halfway through cooking, turn loaf and add gravy mixture, pouring mixture around sides of loaf.


Gravy
Wash, coarsely chop and sauté 1 container of mushrooms
Drain well. In a small saucepan combine 2-1/2 cans condensed cream of mushroom soup, 1-1/2 cans of water, and sautéed mushrooms. Salt and Pepper to taste.

How about make homemade burgers. Buy some hamburger mix or throw your own spices in the ground beef. Toss in some onions, bread crumbs and 1 egg. Mix it all together and make patties. Fry 'em, put some cheese on 'em so that it melts on. Then add your favourite toppings (ie. Lettuce, tomato, ketchup, mustard). And don't forget the buns.

Simple and tasty!

Stuffed Cabbage Soup

1-½ lbs. top sirloin, cut into cubes
Brown meat in bottom of pot with 1 Tbsp. Canola oil

1 onion, coarsely chopped
Add onion, cook for 5 minutes, stirring occasionally

Add:
2 cans low fat, low sodium beef broth
1 ?28 oz. can crushed tomatoes
1-½ Cups water
¼ Cup brown sugar
1 tsp. salt
1 Tbsp. fresh lemon juice
1 ?1 lb. package shredded Cole slaw
Ground Pepper to taste

Bring to a gentle boil
Add 1 Cup long grain rice, cover pot, and reduce heat to a simmer. Cook for 45 minutes, stirring occasionally to make sure rice does not stick to sides or bottom of pot.

Tortilla Soup <yummy!> :)

*Note - You can use the chicken stock recipe for with most anything. I usually poach my chicken pieces in this stock for 30 minutes, shred, add veggies and rice, simmer for 45 minutes and there ya go; chicken-veggie soup

Stock

1 pkg. whole cut up chicken w/giblets
1 medium onion
3 bay leaves
1 teaspoon salt
2 tablespoons olive oil

Rinse chicken pieces and set aside
Discard the liver from giblets
Hack up neck and wings into chunks
Cut onion into chunks (it is not necessary to remove the peel)
Heat olive oil in large pot. Add hacked up pieces, giblets and onion Cook on med-high heat for approx. 5 minutes, or until chicken pieces and onion looses its raw colour
Reduce heat to low, cover pot and allow pot to simmer for 20 minutes
Add 12 cups hot water, bay leaves, salt and set aside chicken pieces
Increase heat to med-high until just beginning to bubble. Reduce heat to simmer, cover and cook for 30 minutes.
Remove chicken pieces from pot, set aside to cool.
Pour contents of pot thru a fine wire mesh strainer to remove all of the hacked up pieces, giblets and onion.
Skim oil from top.


Soup

2 tablespoons olive oil
2 red peppers, seeded and chopped
1 medium onion, chopped
3 cloves garlic, sliced and minced
1 (4 oz. can) diced green chili
5-6 Roma tomatoes, seeded and chopped
1/4 cup Cilantro, chopped
1/4 teaspoon ground cumin
1/2 teaspoon ground cayenne pepper
1 teaspoon dried oregano
1 teaspoon salt (do not add salt if you are using a canned lo-sodium broth)
1/4 cup Masa Instant Corn Mix


Simmer stock on lowest heat setting.
Strip meat from the cooled chicken and shred into bite size pieces, adding them to the stock along with the can of diced green chili.

Heat olive oil in a pan. Add onion and red pepper, cooking for 2-3 minutes or until onion becomes slightly transparent. Add minced garlic and cook for 2 minutes, stirring to prevent garlic from burning. Add entire contents to stock. Allow to simmer 5-10 minutes to blend flavors.

Add ground cumin, ground cayenne pepper, dried oregano and salt. Allow to simmer for another 5-10 minutes to blend flavors.


Add Masa Instant Corn Mix, stirring until blended in. Add chopped tomatoes and cilantro. Stir briefly, cover and allow to simmer for 15 minutes.


TOPPINGS

Fried Tortilla Strips
Shredded Mozzarella Cheese
Chopped Avocado


Tortilla Strips

4 (10-inch) flour tortillas
Olive oil

Cut tortillas into 1/2 X 2-inch strips. Heat 2 tablespoons olive oil in skillet. Fry strips in batches until golden, adding more oil as needed. Drain on paper towels.


To Serve

Ladle hot soup into bowls, top with fried tortilla strips, Mozzarella cheese and sprinkle with chopped avocado.

Teriyaki wings

1C lee kum kee chicken marinade
1/2 cup of water
3 slices of ginger
1lb of chicken wings

boil the marinade, water, and ginger, in a pot
add chicken
lower heat
let simmer for 20 minutes
turning chicken every 5 minutes.

super fast and easy!

I like to broil fish or chicken breasts in a little teriyaki sauce. If you don't overcook it, it will be very juicy, very tasty.

Use aluminum foil in a pie tin or something and theres almost no cleanup too! :)

Easiest recipe ever.

1 lb ground beef
1 can Veg-All regular or hot n spicy.


Brown the meat in a sauce pan, drain off the fat.

Put in the whole can of Veg-All after draining off the liquid.

Spice it up to your tastes. Salt and pepper, chili powder, garlic salt, pressed garlic, onions, peppers. Anything and everything, just depends on what you like.

Serve it up with some garlic bread

Take an Altoid or two :)
