Yes sir, they are indeed the same folks, but kitchen cutlery is sold under the Forschner brand (at least that is what I have seen). In my stupidity, I forgot that 😀

I have one.
It stays sharp longer than my Global.
I suppose under a microscope we could see that it is sharper, but it does not "seem" that way when you use it.
 
Go with either an 8" or maybe a 10". You'll probably find a 6" a bit too small. I'm sure you can find knives of different sizes at work. See which size works best for you and the type of work you are doing.
