Just cooked crawfish and sausage jambalaya

Had some leftover crawfish so I got some andouille and made some jambalaya. OMG is it yummy! And there's enough here to be eating on for days. 😀

What exactly is there to eat on a crawfish? It's all shells and no meat.

One tiny little morsel of tail meat per crawfish, plus all the wonderful fatty fluids and sexual organs you can suck out of the head cavity. Jambalaya would be made with the tail meat.
