Just bought a skillet, give me a recipe

steakkkk. Go down to costco, pick up one of their prime ribeyes (should be around $12.99 a lb), put skillet in oven at 500-550, let it heat up, toss it on the stove on high heat, throw the steak in there, 30 seconds each side, then 4 minutes each side in the oven. Perfect rare to medium rare steak and it's freaking awesome.

Season with salt and pepper before doing.
 
You could probably go with this Cambodian delicacy, doesn't seem too complicated - especially for you!

Bacon. Nothing seasons a cast iron skillet like cooking bacon in it.

This. Cook up some bacon when done toss in a couple eggs and cook them as well, gently with the spatula splash some of the bacon grease over the top of the eggs to cook the tops. For your hearts sake only do this once this year. 😉
 
Diced squash and zucchini with either a diced chili pepper or a jalapeno pepper mixed in.

Add about a table spoon of olive oil, stir fry everything together, pour of steak seasoning over the mix as your cooking it.

People who enjoy a good steak? Not arguing one method is better than another, but they both produce an excellent steak when done right.


My method:

Prep the steak,
- Let it sit at room temp for a little bit. You don't want it out for too long, but long enough to not be fridge cold anymore.
- a LIGHT coating of olive oil.
- Pepper/salt the outside lightly. If you have a mix/rub you prefer I guess you could do that, but keep it simple if at all possible.

Prep the skillet.
- throw skillet in oven
- Heat oven to 500. Yes, 500.

When oven is ready, turn on a burner to high.

Take the skillet out of the oven and place it on the burner. It'll be fucking hot. Use appropriate protection, two regular pot holders is not enough. You'll want something designed to hold high temp items (I use two of these: http://www.amazon.com/OXO-Silicone-H...8668602&sr=8-2)

A small dab of olive oil, or butter. The skillet is insanely hot, don't dilly-dally - drop something, spread it around a little, then place the steak on. Don't move it at all while it is searing. Sear each side for 60-90 seconds.

Once both sides are seared throw the skillet into the oven. It should take about 6-9 minutes to cook depending on how you like your meat. I usually get a medium rare around 7minutes or so depending on the steak thickness.

Take it out, check the temp/firmness and if it's good, let it rest for about 10 minutes. Then enjoy.

I do this about once a week. Though, the kind-of-health-food-store near me always has some type of steak on sale and I get that. Two weeks ago Rib Eyes were 6.99 a pound & last week NY strips were $5.99 a pound 😀
 
Actually, the best way I've found is to roast a chicken in it. 475 for 50 minutes, just put the whole chicken in the pan with some salt and pepper.
That doesn't sound like it results in an edible chicken.

Though it does sound like a good way to season the pan. Typically you want to hit the smoke point so that the oil can actually break down. The instructions that tell you to put the pan in an oven at 300F just leave you with a gummy yellow film.

It is the very first recipe in Thomas Keller's Bouchon and produces the juiciest chicken you've ever had.

back to the OP... I'd pass on cooking anything with tomatoes or otherwise highly acidic in a cast iron pan. they'll ruin it.

I have done this a few times now and my friends are amazed how great the steaks taste. So juicy and full of flavor.

ive abandoned the fire, b/c pan searing is unbeatable.
