So I've been boiling a whole chicken for 2 hours. I noticed that halfway through it started floating, which means a good percentage was raised above the level of the water. Will this effect cooking? I don't have to find a way to weight it down so its entirely submerged, do I?

It will cook a bit faster if submerge in the boiling water, however it will cook partialy submerge.

Boiling then cool it down with ice then skim off the fat is a good way to make broth.

Chicken soup?

......

in that case you should have chopped it in pieces.

My parents do this all the time. It's a very simple, very nice and easy-going meal. Just some chicken broth, some tender pieces of chicken, and some rice.

Submerge completely thawed chicken in pot of boiling water. Bring back to boil, then turn off the heat and let sit covered until chicken is cooked.

Unless you're making chicken soup, then boil chicken till hell freezes over.
