Job screwing us over, can I do anything about it?

Long story short, I was told, during the interview/hiring process that we would have the week after christmas paid, off. Apparently this was something stated at last years Christmas gathering to all employees.

Well guess what! Found out today that it is not going to happen. For me, I would not have accepted this job if that were the case as there isn't paid vacation as it is.

Is there anything I can do to about this? I have a sheet they gave me during the hiring process that says the paid holidays etc.

You have it in writing? Is it specific? As in: does it list the days, the fact that they will be paid, have your name or state that this is company policy, have the company's name or letterhead on it, signed by a manager or recruiter, and was this offered to most employees as standard company policy? You could then use that to fight for the days off, but I warn you that you will most likely make enemies in management.

Yes, yes, yes, and yes. (yes to all questions). It WAS posted on various boards around the office as well. States every single day, and that it will be PAID (december 25, 26, 29-30 and january 1-2).

If you signed a contract that stated those holidays were paid vacation, they cannot change there mind. Talk to your supivisor and tell him you hand plans already scheduled

If you have everything in writing, then take it through the chain of command. Also make sure that there isn't a, clause, your employee hand book that states the company has a right to change policies at any time. If you are still not satisified, you can take it to the EEOC. BUT, be sure this is the path you want to take.
WARNING! This can follow you around. Companies do not like to hire people that will buck the system. I've seen people that had a hard time getting a job after they did this. It must be a last resort move.
