From a physics standpoint this won't work as a vacuum will be created in the bottles, preventing the liquids from flowing. You would need to add holes in the tops of the bottles.

Wouldn't some air potentially be able to slip past the liquid in the pipe/neck of the bottles when the faucet was opened?

Pretty sure the soda and booze wouldn't really mix much though!

Possibly, but this would either result in splashing or a very low flow.
