I've tried this several times using one of those grill-press things intended for grilling fish without having it fall apart. I really like the flavor and char this results in but I find its harder to keep the white meat juicy.

Spatch is the way to go.

I coat the bird with seasoning shake, then with brown mustard. In it goes, then baste it 2 or 3 times with melted butter before it finishes.

Don't use a grill press, use a cast iron pan, then the bottom of another cast iron pan on top to help flatten it. Fewer avenues for moisture to escape, also cooks it a bit quicker. I'm literally hungry now just thinking about it.
