What's the story here? They don't eat those alive, do they?

They do, and I have. But I'm pretty sure that specific one is dead.

He is pouring soy sauce on it, and the salt of the soy sauces is causing the muscles of the octopus to spasm and act like it is alive.

If it was still alive, it wouldn't be sitting there like that. They are very active creatures. Octopus that is still alive is very tasty.

Because the suction cups on the arm pieces are still active when the dish is served, special care should be taken when eating sannakji. The active suction cups can cause swallowed pieces of arm to stick to the mouth or throat. This can also present a choking hazard for some people, particularly if they are intoxicated.

Looks like it's partially frozen and the soy sauce which is salty and room temp. is melting the limbs causing it able to finally move. I wonder what the porpoise of torturing animals is for those folks. Shark fin soup anyone?

no torturing involved in that gif. The squid or whatever it is, is already dead.

Yeah, thats a different cuisine. That's octopus that was alive like 15 seconds ago and the pieces are effectively still moving under their own power, and is very very active on the plate. It is constantly moving. Also it tends to be only the chopped up legs. I've never seen the head included in Sannakji.

The gif is octopus that is freshly dead, which is why its sitting still at the beginning of the gif. However, as said before, the salt in the soy sauce is animating it due to the salt firing neurons in the octopus.
