Maybe this should go in highly technical..

i was making some jello, and it isn't hard yet, so i was wondering how jello actually works ?

I mean are there jello molecules that hold on to the water molecules or what ? And how come it works better when its cold ?

 
collagen, that makes sense. after reading where they get the collagen, im not sure i ever want jello again, but it does explain its properties.

It is not always cow hooves anymore. I called Jell-O and the said the gelatin was extracted from the hides of animals used for food production.

The amino acid sequences make is so that structure is favorable. It's more of a random association than the molecules actively rearranging.

Same thing as a lot of gels, the collagen strands basically form cross links between eachother when reassociating randomly, making a sort of 3d net. Same concept for making gels used in electrophoresis, and you can actually make them the same exact way.
