The Thai place down the street appreciates this thread, after seeing this got some Panang style delivered. But I keep telling them, make it spicy, and I guess they think that means put one tiny pinch of chili in it, had to kick it up with a big spoon of my own red chili.

Good thing they put a garnish of wilted grass clippings on there to spruce up that plate full of dog turds.

If you have a dog that does that I will buy him and he can shit on a plate for me. He will have the best life of any dog. I will be treating him royally. PM please.

Ate curry at least once a week when I was in South Korea.

They probably think most Americans can't do spicy food. When I was in Thailand I had to always tell my girlfriend to make it non spicy. The food was so hot I had tears rolling down my cheek.

Just to clarify, OP is talking about "Asian" curry, most probably Thai. Not Indian/Indian subcontinent.

My local Thai restaurant makes some blisteringly hot dishes, but not all Thai food is supposed to be hot. Are you sure that what your ordering is supposed to be hot in the first place?

The quality of rice is important. I used to buy supermarket basmati, but then I tried Tilda brand that I found at a local Indian market based on some reviews and it's better by far.

Long grain rice with curry? I thought short grain, sticky rice was the norm.

Depends on where the curry is from. When I go to an Indian restaurant it's always basmati although that's not all of the rices in India, but it's my favorite variety. If I'm doing a Thai version I'll usually but not exclusively make jasmine rice.

Sticky Thai rice is amazing but it's a bitch to get right at home. I buy stupid amounts of the stuff from my take away.
I think it's a combination of the bamboo steamers and something funky that they do with jasmine but they won't tell me and I can't work it out.
