I have pics... I just haven't uploaded them yet. I'm currently fighting with AT&T to get my DSL back up and working after some account changes that *gasp* they managed to screw up, so I have no internet at home. Of course since I'm at work and today is officially a semi-screwoff day (corporate summer picnic this afternoon), I may get some time to upload them today.

My 4th grade teacher spent some time in Vietnam during her college years (one of those teaching English things iirc). She told us a story about how she was in this market one time, and she came across a basket of German Shepard mix puppies that were roughly six months old.

She told us that she fell in love with this one particular puppy and gave the guy the money for it. The guy told her, in broken English, "Good pick. Come back hour. I clean for you.". She thought the guy was going to give the puppy a bath. Imagine her horror when she returned and the guy handed her a brown paper wrapped package.

In hindsight, I have no idea why she told us that. It's not exactly the best story to tell a bunch of 4th graders. If a teacher told that story today, she'd probably be sued for God knows what.

I forget exactly how big the cooler is, but we could fit a small body in there if needed. It's the bigger of our two coolers, I want to say 55 quart.

After 35 packages of ground has been removed, we're down to the various cuts.

Repacked for additional care, the cuts laid out for their money shot. I'm sure you can see a few alternator sized chunks in here.

The only other thing in that freezer are two whole chickens weighing in at about 4 pounds each (other than what's in the basket).

And since everyone was worried about the thickness (TWSS!)... one of the T-Bones I grabbed at random. Every steak is about the same thickness.

I'd love to give you a full breakdown of what we got, but unfortunately I left the list of what we wrote down on the kitchen counter as I grabbed everything for work this morning. Some of the stakes, namely the Porterhouses were so big they wouldn't fit in the gallon ziplock bags. ONE of those is indeed a meat portion for my entire family of 7. Why? Because we're not pigs, and we try to eat balanced meals.

I have been wanting to do this for a while - large family, i have 2 freezers read for it - but I live in a large metroplex. The links in this thread havent been helpful for me, and I don't really know any farms or local ag-type folks.

Certainly there are options for bulk beef in the Dallas/FtWorth metroplex.

Best thing I would do is start at your local farmer's market and ask around.

we split a half in thirds around here about twice a year. Nothing beats a real farm raised cow that you've driven past all year watching it graze... No hormones or any bad stuff ever added to the cow.
