Proper would be "Information Technology," not "I.T."

You only want to abreviate industry standard technical terms on a technical resume, not titles.
 
Everyone I know in the business writes IT, so does the press(but then, I live in Sweden, maybe you do it differently in the States 🙂).

No, we don't. It's IT here as well. Yes, technically it should be I.T. (to be consistent with the language), but that's not how it's done. FWIW I got offered a job two weeks ago and had IT on it.
