I made chili last night and fell asleep while it was simmering on the stove from 8pm until 3am. It was uncovered in a skillet. What do you think, safe to eat or throw it out?

Of course it's safe. God Americans have weird ideas about food safety. This is almost as stupid as the person who panicked about leaving eggs out for a day.

Well if it was simmering there is no way it's bad. I just don't understand how you can simmer it for 7 hours without it being a black sticky blob.

There's no problem with keeping food hot for too long. You just don't want it sitting at room temp.
