Is there a way to see everything running in memory? (Windows XP)

Lately, I've noticed that 200MB more than usual is being used (commit charge) and I don't know what is causing it. The Processes tab in Task Manager doesn't seem to show nearly everything.
 
You could try a 3rd party tool like process explorer, but likely the extra 200M is being used by the system cache unless you have some sort of trojan installed.
