Is there a trick to boiling eggs so they are easy to peel?

Peeling hard-boiled eggs can be extremely tricky if the eggs are too fresh. The number one rule, therefore, is to use eggs that are at least five days old from their packing date. The best way to do this is to first tap the eggs all over to crack the shells, then hold each egg under a slow trickle of running water as you peel the shell off, starting at the wide end. The water will flush off any bits of shell that cling on. Then back they go into cold water until completely cold. If you don't cool the eggs rapidly they will go on cooking and become overcooked, then you get the black-ring problem.

Right after you take the eggs out of the boiling water, give them a tap with the back of the spoon (just enough to break the shell) and leave them in ice water for a few minutes.

like others said, soak in cold water immediately after they are done. should make them very easy to peel.

though, some eggs are still hard to peel after this process... my parents say very fresh eggs are hard to peel (of course, really fresh eggs are rare)

the fresh bit makes sense too, all the ones i have bought recently have had ages until their BB date...

I've never had that problems when boiling eggs. Whenever I eat eggs at my mom's, however, that's a different story. The only thing I do is I boil them for a long time (30-40 minutes) and then drop them into cold water for a couple of minutes. Maybe cold water thing is the trick.

I cook mine in a pot with three tablespoons of salt. Bring them to a boil - once the water is boiling remove the pot from heat and let sit for twelve minutes. After the twelve minutes dump the hot water and fill with cold. Let sit for a couple of minutes until the water gets warm - then repeat two to three more times. Remove eggs from water and refrigerate. I cook 24 eggs at a time this way with no problems and easy peeling everytime.

You with the cold water trick people, does it only work if you let the eggs get totally cool before trying to peel them?

i just boiled a couple (not overly fresh now, at least a week or so in the fridge), and popped them in cold water, but only one lot, and they were still warm in the middle when i ate them...and they were pretty nasty little sods to peel :(

tasty tho' :D
