I'm going to go out on a limb and say it's a clamping table.

Win!

I wasn't sure how to search for this kind of table and that does the trick.

The URL includes the description "Clamping Table"...

what exactly is a "clamping table" used for?

To hold a workpiece securely when drilling it, for example.
It can also assist in keeping stock aligned while attaching fasteners or to apply pressure while adhesive cures, etc.
