I use Mencoder, which is command line.

Difficult to use, but gives superior results.. There may be GUI front ends to mencoder that would be very usefull.

I believe that you can use dvdShrink under wine.

install the libdvdcss2 library. then you can use any of a long list of encoders/guis to rip/backup.

Personally, I've used dvd::rip. Works plenty well with xvid and mp3. And it works MUCH faster than it does for me in windows.
