I've had many an onion break my heart in my 19 years here. A bad onion isn't worth your tears, but a good onion will never make you cry.

If you light a candle while you're cutting it you don't cry so much. Same is true for setting the house on fire.

Personally I strap on my ski goggles whenever I cut up an onion. It really stings if you don't.

In fact they do. When cut, an enzyme is released that can irritate the human eye. I love onions though, can eat them like an apple, and (for some reason) am immune to this effect.

Actually its not an enzyme, its a sulfur compound that, when mixed with the water in your eyes, creates a mild sulfuric acid which burns.

The enzymes then decompose some of the other substances that have escaped from sliced cells. Some of these substances, amino acid sulfoxides, form sulfenic acids, which then quickly rearrange themselves into a volatile gas.
