Is it safe to start the wheel of time again?

I am just finishing The Dark Tower by Steven King (ripping good read btw), and I need another series to occupy my time. I started the Wheel of time a while back, but gave up because the series wasnt finished and vowed not to pick it up until it is. According to Wikipedia, book 12 will be the last book, even if it has to be 2000 pages long. So do you think if I start reading now, and read slowly I have alot of time on my hands, he might have it done by the time I get to book 12?

Any other recomendation for a good fantsey series?
 
If you alternate between WoT and ASoIaF, the last WoT book and next ASoIaF book might come before you're done either.
