then releasing clutch slowly without stepping on gas....
or will this DEFINTILY stall the car?

If you do it really slowly, the car will gradually start to speed up and will reach a speed where you can take your foot entirely off the clutch without ever touching the gas or stalling. I have done it a few times for fun and it takes around 20-30 seconds.

Yep. Just release it to the friction point, hold it there until you build up a little speed and release it all the way. The car will roll without gas.

Depends on car an skill level. My '93 lt1 and my '02 ls1 both at a stock idle of about 700 RPM will move out quite nicely with no slipage or stress.
