Is it good enough just to be sore?

So I go to the gym about 3 times a week, covering all the major body parts during the course of the week..and after each visit I do some short, quick but intense stuff that'll usually leave me sore for a good deal afterward.

I usually only spend about 20-25 minutes each day on whatever it is I'm working out that day, and do a few intensive sets while I'm there and it usually does the trick.

Should I try to go for heavier volume, or keep it as it is? Would it make any difference?

Well, are you noticing good gains?
You don't want to overtrain. General rule of thumb is don't train a bodypart if it's still sore from last time you worked it.
You want to make steady increases in weight.
I'm not sure how well this answers your quesetion...
