<< Morimoto should have won. His dishes showed true culinary skill. He did with the Japanese Lobster what should have been done with it. Lobster should be enjoyed simply, but with other flavors. Not as part of a spicy Americanized Mexican dish. Bobby is good, but he went too wild in his dishes. >>
IMHO, what Morimoto did would have been the same as if Flay had broiled the lobster and served it with garlic butter. I could have made that dish, so could thousands of japanese chefs, which is why even though it tasted great, it wouldnt score high. It was fairly ordinary in Japan, other than the high cost of the lobsters. The presentation of that dish was awful with the lobsters standing at attention. He could have simple garnished them on a plate it would have looked so much better. What I think the judges would want is a dish that shows off the chef's skills to the highest degree, IMHO the drunken lobster was a lazy dish. It let Morimoto focus on the three other dishes, since it took so little work. I cant imagine that fried lobster sushi is better that just lobster sushi with soy and wasabi. I think the comments regarding it were in surprise that it wasnt a complete disaster, not so much that it was a great dish.
What Flay did is fairly common in the US, but not in Japan, so to them it could have seemed "inventive" and "exciting" as well as tasting good or great. He also had one more dish, and that would count too. 5 good dishes will beat 4 good dishes, and 4 really good dishes with 1 so-so will be better than 3 really good and 1 so-so.
