I see no reason to. All you'd get by switching from iOS to Windows 8 is a much worse selection of apps.
. and probably inferior hardware as well.

Inferior in what regard? IMO there's better performing hardware on the market than what Apple chooses to force you to use...

The only thing Windows 8 has over iOS is Office, but I believe I read that MS is set to release Office for iOS anyway, so I no longer see the need for an iOS user to switch.
The few things/rumors we know are that ARM Windows will come with Student Office pre-installed (Word, Excel, Powerpoint, One Note), and that Office on the iPad will be really stripped down.
At the danger of dredging up a really old tired argument (but I do feel in this case its relevant), if you need a fully featured office suite wouldnt you be better off with a laptop?
