Let's be realistic. Morphing would just be too complex for the human body, you'll have to talk to Mystique about that. As far as what it says about your personalities... I dunno.

I would prefer to have Immortality and Permanent 20-ish Health. That way I would have eternity to either get somewhere or find myself a hot girl, and would never be afraid of dying or getting hurt so I could walk the ocean bed if I wanted to...
