CPU yes, GPU not really, you aren't dealing with a game that is very intensive and you dont need 60FPS of poker...... the HD 3000 on the i5-2500k would be more then enough, hell the HD 2000 would be. And if it turns out you like the eyecandy you can always pick up a GPU later.
 
I'm more than a little confused about this INTEL bug thing.

I'm getting that the SATA ports may degrade or w/e but I'm not making the leap to why I can't go ship a Sandy Bridge i5-2500 with an ASUS mobo. I mean SATA ports are on the mobo no?

No because it is a chipset problem ALL sandy bridge motherboards have it. The chip was made by intel though, but all board makers have it. The new B3 boards are starting to release soon.
 
Not sure, but I think for the tasks you mentioned you could maybe go with a lower model for the processor, you might be fine getting the i5-2300 or even an i3 sandy bridge.

As for the graphics:
If it's really just for poker intel hd2000 will suit you fine in any case.
If it's for gaming, you might get around with HD3000 for the moment in low details, but in the medium term you'll need discrete graphics anyway.

Is there an easy way to identify the new fixed boards as most of the computer component suppliers in NZ have poor english and getting more than a yes/no answer is difficult.

Yeah i'm pretty set on the i5-2500k, with a H67 board but I might just get the i5-2500 if it's gonna be too much more for the 2500k NZ pricing is retarded.
 
I'm looking at two different models here

P8H67-M PRO
P8H67-M LE

The PRO is priced a little higher what exactly am I paying more for?

Two more DIMM slots, a second physical x16 slot (still x4 electrical), an IDE controller, a better sound chip, and some more onboard cooling. The LE is pretty much the most cut-down H67 board that ASUS offers, but I'd say go for it as long as it has the features you need.
 

Don't bother with either. They both fall under the category of "fancy RAM" and are as such wastes of money for a Sandy Bridge build. Get some normal RAM like what mnewsham linked.
