Question Intel NUC recommendation

Greetings,

My current vm based htpc seems having hard time to play recently.
So I'm pondering on replacing it with an Intel Nuc.
With the coming sales, I'd like to explore if there a good setup I can look for that will work for me.
I'm looking for something that will hold 3 years do I assume I need lots of ram, not sure which cpu to get.
disk size doesn't needs to be big, I'm planning to run libreelec on it.
builtin CEC would be good but not a must as I can reuse me current one.
4K resolution is a must, 2.5G nic will be nice but I can get a usb one if needed.
any recommendation?

I'm still using a 2016 vintage NUC6 i3 as my HTPC (except at the moment, my TV died). It plays everything I've thrown at it, including 4K BD remuxes.

CEC has been supported for ages, if you're talking Intel NUCs specifically:

HDMI CEC Information for Intel® NUC

Information about the HDMI CEC header for Intel® NUC products, including a description and pin numbers.

2.5G is available at least from NUC11 - might depend on the exact SKU, I'm not sure.

I imagine any of the ASUS NUCs would work just fine too.
