It seems everyone likes Chicken Tikka Masala, but I'm wondering how many know that it's actually a British creation? Nevertheless it seems most Indian restaurants offer it, but whenever I do so I often get the question, "Do you eat anything but Tikka Masala?" It seems there is a little resentment towards the dish for it really doesn't represent much of Indian cuisine, imo.
I work with a lot of Indians from all over, but primarily from the Indian state Andhra Pradesh. We go to Indian restaurants all the time, but they have something of a negative view on what they consider to be more north Indian cuisine. I favor North Indian myself. Southern also seems to be consistently more liberal with the ginger, clove, and other core ingredients that work well in limited quantities (too much clove or ginger can completely overwhelm the palate, imo).
I don't have a favorite dish really, but I love pretty much any curry along with proper rice (namely Sona from the Andhra Pradesh region).
