In the interest of Foreign Relations, need Poutine advice

My wife and I are good friends with a Canadian transplant (to Chicago) couple, at dinner last week I asked about Poutine, having seen it mentioned several times. It escalated into a full-blown memorial day poutine party.

What do I need to know? Any rules of etiquette, forms to follow, additions or comments to make?

:) I'm doing extra cardio in preperation.

the best poutine i ever had was from a place near Quebec City called Village des Sports.

i like New York Fries' poutine too, as far as a fast-food place goes. their Tex-Mex fries are great too.

fresh cut fries with the skin still on the ends is the best for poutine IMO. damn... i'm HUNGRY! :)

Steady the poutine bowl with the left hand. Consume using a fork or spork using the right hand.

Once consumption has begun, you may not leave the table until the poutine is no more.

Stating "A Mari usque ad Mare" in deference to Canada prior to beginning is always appreciated, but not mandatory.

No, it's not that. I don't have a problem with foods touching. It's just the thought of cheese and gravy and greasy french fries that gives me the dry heaves. I tried one of those KFC "bowls" that has gravy and cheese on it and it was just nasty.

Strangely enough, I used to mix up my peas and cottage cheese and top it with catsup when I was a kid and that didn't make me gag. I liked it.

Crunchy fries are 100x better than normal fries, oh and get the proper poutine gravy. Make sure its stupid hot as well, so the cheese curds melt, otherwise they'll squeak when you chew them. Oh, and don't just have the basic type, add some fun things like:

chicken and peas (best poutine ever, every time I go to Montreal I go to Mondo Frites and I get this)
bacon and corn
salsa and cheese sauce (instead of gravy)
broccoli and ham
etc...

oh dear God, don't equate those awful KFC bowls to wondrous poutine. even their actual "poutine" is nasty. the old KFC fries were so much better - they were OK for poutine. i used to be a cook there. they never had cheese curds but the old fries and gravy were merely ok.

Awesome, I'm not in charge of poutine, just beer. :) I'm brining a Mild Brown (very malty\nutty) that I dumped half a bottle of Bourbon into, it's pretty nice, and should pair well with the fatty goodness.

We're getting fresh cheese curds from a place up in Wisconsin, so I'm confident they'll be good.

I've never heard of this, but now I want to try it. Gotta see if a cheese place can get me the proper ingredients. I can make my own fries and gravy, but I don't think I have an afternoon to spend making cheese. Awesome post :)

peas and cottage cheese just seems the a bad idea
especially seeing as cottage cheese looks like a yeast infection gone bad

No, No, it's just the CHEESE portion of curds and whey. The milk fat has coagulated and formed a lump, the bond is tight so when you bite into fresh curds they squeak a bit, like rubber, but they TASTE like fresh cheese. Esentially it's unpressed cheese.

It would depend on the particular plate. If every item is slippery, slimy, greasy and bland, then I probably would respond by gagging. I don't have a problem in general with foods being mixed together. It's just not right to mix cheese and gravy. There's something unnatural about that.
