I'm the type who wants the meat well done. I'm not bothered by a 'pinkish' interior at all. I'm much more bothered by the blood because I don't like it at all.

so I started to think...how little can it be cooked while still getting rid of the blood? I wouldn't mind trying a medium steak, with the juices intact, so as long as it doesn't contain blood. Is it possible, or should I simply go buy some low quality steak, burn it to hell, and call it a day?

My medium steaks never have visible blood.

You must be doing it wrong.

Juices != blood in the typical sense.

I love my steaks medium. Some places there is still a little blood, others its grey all the way through. I would prefer it still a little pink with no blood.

Once you are getting pinkish rather than red, I think the Blood is pretty much cooked.

Most of the "blood" you see is protein-rich water mixed with some red dye.

that's not blood. but if you insist on not having that protein rich water on your plate, then cook it to medium. once you pass medium rare, it doesnt' really matter what you do with it. that said, overcooked high quality steaks will still taste better than overcooked low quality steaks

Cook a steak rare at very high temperatures, and let it cool off enough to let the juices settle again on the inside.

I order steaks rare at restaurants and have only once had a bloody plate.

Yeah, its really YMMV. I don't mind it a little under or over done. Prime rib is a different story though. Every time I order it, it always comes bloody and still raw in the center. I love the cooked part, but can't stand the part that still has a heartbeat.

I was looking forward to a nice steak for dinner but then my plans changed and now I have to eat at a restaurant. boo.

As said - that's not blood. That's meat juice, aka flavor. They only way you'll get even the tiniest bit of blood is with a super rare steak.
