They're traded just like stocks on an exchange. There is a market 'buy' price and a market 'sell' price. The 'sell' price is the best price available from sellers advertising FS - so if you want to buy immediately, that's the price you pay. The 'buy' price is the best price available from buyers advertising WTB, and represents the price you would receive if you needed to sell immediately.

Just like with stocks, there's nothing stopping a seller offering contracts for sale at a very high price, or putting in a very low offer to buy. No one will trade with them unless the market price hits their 'limit'.
