When I grill steaks I usually lightly coat with olive oil, rub it with a sliced garlic clove, some salt, pepper and fine crushed rosemary....yummy!

No, but seriously. Salt, pepper, garlic, a tiny bit of soy sauce (or oil and vinegar will do too), and some alcohol to tenderize (rice wine).
If you are a traditionalist: salt, pepper, maybe garlic, and then a really good grill. (smoke chips if you like that kind of thing)

I don't know about you but only 100 dollar a meal steakhouses (morton's, ruth chris, delmonico's) barely edge out the steak I cook at home. Any else isn't a comparison.

For steak - other have it...get a good cut of meat and grill or broil. Ideally the meat is room temp.

Same here. Until I found a butcher near me who sells choice cuts I could say that Ruths Chris was better but not anymore. I can make a steak at home that compares quite favorably to their best filet.

The only thing I could think of is "aging" the meat. I still have no idea what that is for or what it does.

"it tendorizes the meat" - I don't buy it. A good cut of meat will already melt in your mouth if properly cooked.

Yesterday I tried something new:

Typical rub steak with cajun, garlic, black pepper.

I simmered a mixture of:
1/4 cup Martini&Rossi Dry Vermouth
1/4 cup Remy Martin VSOP
1/2 tablespoon of Worchestershire Sauce
16+ Drops of Habenero Puree (by accident, the thing just poured in when I tried to get 4 drops out)

Dropped the steak in, turned up the heat to medium/high.
3 minutes on each side gave me Medium Rare.

It was very tasty!!

As I understand, aging the meat reduces the water content, so the steak ends up "Beefier" tasting.

Salt, pepper, chili powder sprinkled liberally on a good ribeye. Put charcoal in 1/2 of grill, sear meat on both sides over the coals, pull over to the cooler side of the grill, cover grill until steak is at desired stage of cooking. Pull off, let rest a few minutes, eat.

I broke down and bought pre marinated steak @ the butcher's. I'm so ashamed.

:)

Word of wisdom: Buy your steak from a butcher instead of a supermarket, it's so much better, and you're supporting a "little guy".

Depends if I have fresh rosemary on hand or not. If I used the dried stuff I use a mortar & pestle on it, otherwise chopped.
