For me personally, I'd like to either be a blacksmith or a lamp lighter.
Ever since I was in the 4th or 5th grade I wanted to be a blacksmith. I took up welding in trade school, so I have some metal working experience. But to hand forge things would be awesome and they do have blacksmithing school. Paul Revere was actually a silversmith and made many of the brass fittings for the oldest sea worthy ship in the world. The USS Constitution.
Being a lamp lighter seems like a fun job. I don't know.
Chimney sweep also sounds interesting. Chimney sweeps still exist today, but many homes now don't have a real wood burning fireplace. I can only imagine that the job of chimney sweep will be a thing of the past.
