Depends on the context. If you're already far gone and got insulin resistance and/or damaged insides, the starch bomb+fat will not help matters.

But homemade fries will still grant a lot of the vitamins in the potatoes and "fat" used. Like if you use grass-fed butter for the frying, the fat soluble vitamins would be present.

I have teeth concerns, so I'd avoid the fries due to the starch content, not the fat content. Or if I do eat them, many would consider me bizarre if I cut them up further with knife and fork before swallowing whole. :D

If anything, eating fatty has not harmed me in the slightest. My triglyceride/HDL ratio has improved from 1.7 down two years ago to 1.2 this year. But I only eat micronutrient-nutritious, non-inflammatory fatty foods like pasture-raised eggs, grass-fed butter, fatty fish, the occasional 73% lean/27% fat ground beef.
All of my cholesterol numbers are pretty good, and I just eat regular food (including fast food once or more per week) :cool:

Homemade french fries in an air-fryer. Welcome to the 21st century.


An air fryer is also great for rewarming any leftover french fries and it doesn't take that long. Much better than using a microwave that makes them soggy.

I have an air-fryer that I got as a gift but I don't use it often because its mostly made of plastic .... makes really good fries though!

OP should probably just get a job at McDonald's and then steal a bag/box of fries. They're so desperate that I got a piece of paper with a QR code saying something like "start work today, get paid tomorrow" in my bag when I went there the other day, so I believe a man of his intellectual range and capacity could dupe them into believing he's a down and out schmuck just looking for a break.

I like to make my fries by first taking some potatoes, cutting them into chunks, boiling them, then mashing them with some butter, milk, salt, and pepper.

Well, live and learn. I still would rather just use plain old potatoes, cut, deep fried, and then seasoned.

I am also weird when it comes to fries.

I love soggy and greasy fries, never a fan of crispy or crunchy fries. Lol

Well, some folks just have better bodies than others.

I was eating a starch bomb-- such as cake, glutinous rice flour pancake, pizzas, or regular pancakes--every day for at least a week or two prior to my blood test, so my results were not "purely reflective" what was in that log thread(I hadn't updated it). Cold weather is annoying and I intentionally decide it was time to build up the layer of insulation. So I did gain weight. Plus, knife and fork allowed me to consume the glutinous rice pancakes, store dough pizza, and regular pancakes no problem. I might have hit my starch limit as I suddenly have no cravings for any sweets or flour products today. And my mom's blood work is way less than pristine, so I figure I might as well make eat the flour products so she doesn't have to eat as much of them.

My baseline HDL was that HDL was 44 and 49 in 2019. It's now 64

I prefer my fries in peanut oil personally although I rarely eat potatoes (aside from baked) or really deep-fried food of any kind for that matter.

The other thing I find potatoes do no matter how they're prepared is aggravate the neuropathy in my feet like no other food does causing pain and cramping when trying to sleep. This is possibly due to a blood-sugar spike per my MD however pasta/other carbs don't have the same effect at all.
