will that hinder my muscle growth?

I was hearing this and that about nitrates, shit this, shit that, but I really like eating around 4 tacos from JntB every week or so (this has become a recent development, I doubt I'll like eating them past February

And they seem to be a good way of gaining much needed calories. I don't have the most voracious metabolism, but its a greedy little bastard, and I'll eat three times a day and still feel hungry.

Can I get away with also eating Jack in the Box?

As long as you are getting sufficient calories and macronutrients (protein, fat, etc), your muscles will grow just fine, even when eating tacos. Now, in terms of overall health - such as the vitamin/nutrient content, effect on hunger and energy levels, and putting random chemicals in your body - tacos may not be the best choice (depending on the ingredients are used), though if it is only for one meal a week, it won't be that big of a deal.

I occasionally have 2 boiled eggs for breakfast (along with my usual oatmeal with cheese or sausages)

Should I instead have 3 boiled eggs after coming back from a workout?

its not how much or often or what you eat that determines alot of hunger.

Fat/protein like that in meats satiate you much more than sugars, grains (carbs)

If you're trying to get bigger, I would just worry about eating enough food, period.

Most every Wednesday I have 1 Jumbo Jack, and 2 Tacos for breakfast on the job. It's cheap, filling, tasty, and convenient.

The never boring, but always controversial Dan Duchaine (RIP) once said regarding bulk up programs: "Never feel guilty about eating a Big Mac. Feel guilty that you didn't eat 2 with a large side of fries".

This of course doesn't take into account overall health and longevity issues.
Dan died at age 47, due to kidney failure caused by hereditary polycystic kidney disease. He knew he had this disorder and lived his life accordingly...
