I am legally entitled to remove people like him. I have many police officer friends and have asked them about this stuff many times. I never hit him and it was all on store property after telling him to leave.

Oh you live in Canada so I guess it's different didn't know that but here in the States, if you work somewhere your company could get sued and they'd most likely win if a worker puts their hands on someone and hurts them.

Unlikely, because it happened on store property after the guy (not a customer - never bought anything) was asked to leave the premises (trespassing). Following which said guy tried to strangle his opponent behind the store counter (assault charge) and then threw the first punch at our poor put-upon sub shop guy (second assault charge).

Um, no. It doesn't matter if you're in Canada, the US, or Zimbabwe. If somebody is on your property and you ask them to leave and they get physical, you can get physical back. That is a basic legal right which trumps any kind of rules pertaining to stores, patrons, etc.
