my GF makes zucchini bread all the time. Its great but I like to try new recipes for things.

I think I will serve some nice loin pork chops with the casserole.

Zucchini is excellent grilled. Just slice it into strips about 1/4" thick, marinate it in some soy sauce or something similar, and throw it on the grill. Delicious.

I love making zucchini & seafood onion soup (my own creation that everyone that I know love , and I also like roast zucchini.

I hope that your zucchini isn't too old because the flesh get a bit sour and nowhere near as nice as young zucchini.
