I was gifted a fish

My cousin went on fishing trip with his son and his 11 year old caught couple red snappers. So they gave me one. It was a big fish.

Old banana for scale

Decided to grill it whole
Coarse sea salt and lemon

45 minutes indirect heat. Fish temperature probed 140-145 F.

I decided I wanted to finish sear the skin so I used weed torch to crisp the skin. The fish was so heavy that it broke when I tried to flip it.

Ate it with soy sauce with wasabi. Wild red snapper is great tasting fish.

The best part was the head and the cheeks.
 
I love Red Snapper grilled ... looks really good! 🙂

Would have filet'ed it and done a short marinade (skin-on) in white wine and soy with a couple drops of sesame oil myself.

Size of that fish looks like you might have been able to get away with "steaks" although snapper is a bit flaky.

Thanks! I spritzed it with some sake before I cooked it. I wanted to filet it and eat one side as sashimi and grill the other filet but my wife likes whole cooked fish and wanted it grilled whole.

It was the largest red snapper I grilled whole. Previous ones were probably 1/3 to 1/4 the size.
 
My parents tried to force me to eat red snapper as a child. It smelled like ammonia. I thought my parents were f'in' insane for eating something that smelled like poison. They did the full-blown "you're sitting there until you eat it ==> it will be waiting for you at breakfast" thing. I won that one and they threw it away (rather than eat it themselves, point to ironwing). I've never eaten fish again.

Never had a fish that smelled like ammonia. Had plenty of fish that smelled bit fishy.

Now I've been served lot of bad shrimp. Bad shrimp smells like ammonia. I stopped eating at Pappadeaux restaurant locations in Atlanta because they knowingly served spoiled shrimp that smelled and tasted like ammonia. That's a no-no especially if you specialize in seafood.

Interesting ... Some people are actually allergic to certain fish as well as the usual suspects clams and other shellfish. Could explain why Snapper smelled so bad maybe.

I had a similar story, and I don't eat fish now. It's good for you, or so I've been told. I need to give it another chance, but I hate wasting money.

There are many different kinds of fish. They taste as much the same as say chicken and beef.

Well maybe a bit closer then that but you get the idea! 😀

Get a can of kippered herring. It's a ~$2 gamble, and if you're gonna like any fish, it'll be that.

I've tried quite a few over the years, but the only one that I've liked was swordfish at a bar. I haven't seen any place else that served it though.

I can't picture a fish-hater liking them though?
I think a lot of people only think they hate fish due to a suboptimal first experience. A nice smokey and meaty piece of fish without having to "prepare" it, eg screw it up might be the turning point, and it's cheap to try.
 
My pops liked herring, but I've never tried them. Sardines was another fav of his, but the smell of them made me want to puke.


I suggest you try a small piece of Alaskan cod or maybe Haddock.

If they have a "Captains cut" or similar go for that. If prepared properly it will be light and flaky with very little to no fishy-ness.

I think Wendy's fish sandwich is cod. I'll try it tomorrow for lunch, with some chili.
 
kippered herring is pretty mild as far as smell.

if you can cook, i generally recommend pan fried swai fillet for people who are reluctant about fish. just dredge them in a light coating of flour and fry until a light golden crust forms. very little fish smell since they are farmed and fed corn. the only problem is the water quality in vietnam and china farms.

Be advised although the Wendy's fish sandwich, like most of their food is better then run of the mill fast-fare, even if you don't really like it you still might like actual fresh cod.


Also if you have a quality Fish & Chips place in your area they usually use either Haddock or the slightly cheaper but still pretty good Pollack.

That's interesting. Swordfish is near the bottom of the fishes I like. I rather eat pretty much any other fish than swordfish. Only fish lower on my list might be farmed tilapia.

the texture of fish is so gross

the only type of fish i'll eat is tuna fish salad

or occasionally i can force myself to eat some salmon
 
Tilapia is on my 'never eat' list. Farm raised fish swimming in poop water from China. What could go wrong?!
Yeah, I have problem with farmed tilapia. But not with wild. Tilapia is mild tasting fish. Like all bottom feeder, you can taste little bit of the dirt and mud in the flesh.

I like whole fried fish. But for some reason, US restaurants don't really serve whole fried fish. So whenever I travel international, I seek out places that serve it.
