Haha I'm thinking three soon... but I'd need another monitor and video card for that... or just use my laptop instead. The decisions!! I mean the problem with my dynamic duo is that they don't support very good DPS overall. I mean my warrior and priest took a 5-man rare elite down to 50% before I messed up and died (accidentally dragged a potion down and overwrote my greater heal... I guess clicking isn't so good). I doubt I would've got that mob further than 40% though, he was smacking me hard (~1000 per hit) and I was running really low on mana as it was at 50% with just my warrior DPSing. Although, I think I kind of messed up since I was in Defensive Stance and I had no access to Mortal Strike in Defensive Stance at that time (it used to be on my top bar but I moved it down). But if I had some DPS with me, I bet he would've died

I'm also tempted to roll a Night Elf Priest to replace my Dwarf. As funny as a decision as that sounds, if I want to do "solo" 2v2 PVP, there's no way I can afford to not use a night elf for its Shadowmeld ability. That'll simply give me much more ability to hide so my priest isn't a sitting duck from the start. It'd be a lot of work to level though.
I quit wow a while ago, but I had quite a bit of fun 2manning with a warlock and hunter for a bit ...
It sounds like an odd combo, being not quite a healer/tank combo, but thanks to both toons having decent DPS ... it was pretty straight forward to take on multiple mobs, and even multiple elites at the same time ... hunter pet tanking, voidy tanking, fearkiting, hunter kiting, etc, etc etc ....
