I scored a 5lb Pork Loin roast for $5

I just put it in the oven a few mins ago. Seasoned with garlic, rosemary, salt and pepper. In the roast pan I put 7 cut up potatoes and 4 cut in half cooking onions.

I will also cook up some rutabaga.

The pork will roast at 325F for about 3 hours or so.

isnt that going to overcook it a bit? /likes mine medium well
 
I really have no good recipe for pork loin. The best I've done is to butterfly it and roll it up with spinach and goat's cheese. It's just so lean.

Pork tenderloin, now that's a different story.

I prefer a whole loin to a tender loin. Brining really does wonders for it, OMG so much flavor! Apples, cherry or any kind of fruit glaze works well.

Oh, and another thing, brine it and cook it to medium. You won't need a knive.
