If I could only pick one knife, I'd get something in the 10" range (210mm minimum, just over 8"). You can get a really amazing knife starting around $130, which sounds like a lot, but on the high end of their inventory are $700+ knives. I have a very specific set of knives I use (Zyliss spreader, Victorinox 9" offset serrated bread knife, etc.), based on how I cook. Getting great equipment can be life-changing in the kitchen because your tools stop fighting you (i.e. cheap, crappy knives) & start not only working with you, but making the work enjoyable. Sort of like how building your own computer makes it extra bonus awesome, you know? Or if you've ever gone through a power-tools phase, haha.
