My recipe is similar to those above except for the meat. I use Bob Evans breakfast sausage and it is awesome. Makes a huge difference. Another thing is to make sure that you use quality spices. Don't use the $.99 Walmart chili powder. Spend a couple of bucks and get some decent spices.

Cook time and temperature make all of the difference. If you can let it simmer for 8 hours it's going to be much better than a 30 min or even 2hr quickie.

Recipe wise I like having 1 can of kidney beans, 1 can of chili beans, 1 or 2 cans of stewed tomatoes, and 1 pack of chili seasoning per pound of ground beef. Add in your own chopped onions and peppers to taste.

I don't know about a chili recipe, but that was a cool use of the word infallible. :) I do make a wicked pizza though.

I may be a retard, I prefer differently abled, but that doesn't change the fact that chili is not Mexican.

The Chili being talked about in this thread is Mexican.

Traditional Chili without beans and tomatoes and fajitas and shit is Spanish or something.

how can you possibly have mastered gumbo but you're incapable of winging it on chili? that makes absolutely no sense.

OP can't make Chili, so he gets a bunch of recipes with people telling to to add tons of beans.

This thread's full of fail on every possible level.

my recipe is pretty good too:

2 lbs of ground beef
2 large Spanish onions
3 large jalapenos
1 large green pepper
1 large tin of kidney beans
3 large tins of tomato sauce
chili powder, garlic powder, oregano, salt, pepper, cumin and some Worcestershire sauce.

I diced up the onions, jalapenos and green pepper and put them in my stew pot with some butter and pepper and softened them a bit. Then I added the ground beef and let it cook a bit in the veggies. I then added the spices. I then added the sauce and beans and let it all simmer for 2 hours.
