I need a simple program to record mp3's from my line in/mic

Get Audacity. It is one of the ones listed in the link above. Make sure you follow the instructions for installing lame or you won't be able to save as mp3.
 
CDex also has a great interface for this, as well as being one of the best CD rippers out there.

It's free, open source, small, simple, and comes with any codecs you might need (including LAME) 😉
